Heat large, oven proof skillet (cast iron is best) over medium high heat. Add bacon fat and swirl to coat bottom of pan.
Brown ground beef until no longer pink. Add salt, pepper and all additional seasonings if you so choose.
Add cream cheese if using and stir around until melted.
In a separate bowl, beat eggs. Add to skillet and mix in well.
If you're using bacon and you want it to remain tender, you can mix it in now. Alternatively, sprinkle it on top if you like it a little crispy. I like it crispy so I add it in the next step.
Top meat and egg mixture with cheese and then bacon and place in the oven. Bake for 15 minutes or until set (stick a knife in the middle to make sure there is no more liquid) and cheese is melted and slightly browned.
Serve as is or with your favorite burger toppings - pickles, sugar free ketchup, mustard, etc.
