Spanakopita Burgers

All the delicious flavors of that Greek delight, spanakopita, but in burger form and made paleo! (Or primal: paleo + cheese, if you prefer).

I whipped up this recipe years ago and have no idea why it never made its way to my old blog, but here it is now. You’re welcome.

You can certainly enjoy these burgers on a bun if you’re a traditionalist, but frankly, I don’t want anything as boring as bread getting in the way of the delicious taste of this burger.

We serve them with a green veggie (whatever is lying around needing to be cooked) and usually some form of potato or rice. But really, you could serve these burgers with a side of old shoe and they would still be amazing!

If you love Greek flavors and spanakopita specifically, you must give these a try.

Spanakopita Burgers

All the delicious flavors of Spanikopita in the casual format of a burger

Ingredients
  

  • 2-3 Tbsp. avocado oil divided
  • 1 medium onion, chopped
  • 2 scallions, chopped
  • 1/2 tsp. sea salt
  • 1/4 tsp. black pepper
  • 3 cloves fresh garlic
  • 5 oz. fresh spinach
  • 2 large eggs
  • 1/4 cup fresh dill or 2 Tbsp. dried
  • 1 Tbsp. Greek seasoning I prefer Primal Palate Super Gyro
  • 1 tsp. lemon juice
  • 1/4 cup almond flour
  • 1 lb. ground dark meat turkey
  • 4 oz. crumbled feta cheese optional

Instructions
 

  • Heat a large, oven-proof skillet over medium high heat. Add 2 tablespoons oil and swirl to coat.
  • Chop onions and scallions and add to pan with salt and pepper. Stir occasionally. Cook for 8-10 minutes, until onions are soft.
  • Mince garlic and add to pan along with the spinach.
  • Stir and cook until the spinach is completely wilted, approximately five more minutes.
  • Remove vegetables from the heat and allow to cool.
  • Wipe skillet clean and set aside for cooking the burgers.
  • To a large mixing bowl, add the eggs, dill, Greek seasoning, lemon juice, almond flour and feta. Mix all these together well.
  • Add the turkey to the bowl and mix thoroughly.
  • Once the vegetables have cooled, run them through a food processor to mince everything very finely. Fold into the turkey mixture.
  • Form into patties of your desired size. I've made four giant burgers, six medium sized burgers or eight small burgers. You could also turn this mixture into meatballs if you prefer.
  • Heat that same skillet you used before over medium high heat (you might need two skillets if you made more than four burgers), add a little more avocado oil and swirl to coat the bottom of the pan.
  • Add your burger patties and allow to brown on each side – three to four minutes per side.
  • Meanwhile, heat oven to 375 degrees. Once the burgers have browned on both sides, place the skillet in the oven and allow to finish cooking. Your burgers are done when the internal temperature reaches 165 degrees. This may take as little as five minutes and up to 12, depending on the size of your burgers.
  • Serve on burger buns if you prefer, but we usually eat these as is, no bun required. Serve with your favorite veggies and potatoes or rice. In the video, I show you how to make air fryer potatoes which were delicious with these burgers!
